3 tablespoons butter
1 medium onion, finely chopped
1 ½ cup sharp cheddar cheese, finely shredded, divided
½ cup grated Parmesan cheese, divided
1 ½ cup baking mix
½ cup milk
1 large egg, beaten
1 cup finely chopped cooked ham
Preheat oven to 425 degrees.
In sauté pan, melt butter and sauté onion until soft, but not browned. Do not drain off butter.
Mix cheeses together, and reserve 1 cup for topping.
In large bowl, mix together onions, 1 cup cheeses, baking mix, milk, egg and ham. Mix until dry ingredients are just moistened.
Spray regular muffin tins with non-stick spray. Divide mixture evenly among 12 openings, sprinkle with reserved cheese.
Bake for 16 – 18 minutes, or until golden brown on top.
