Bread, Rolls and Biscuits


Apple Bread with Streusel Topping

3 cups all purpose flour
1 cup white sugar
1 cup packed light brown sugar
1 tablespoon cinnamon
½ teaspoon ground nutmeg
½ teaspoon ground cloves
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon salt
½ cup butter, melted
½ cup vegetable oil
3 eggs, beaten
2 teaspoons vanilla
4 medium apples, peeled, cored and diced

Streusel Topping
1 cup all purpose flour
½ cup packed brown sugar
6 tablespoons cold butter (½ stick), cubed

Preheat oven to 350 degrees.  Spray loaf pans with non-stick cooking spray.

In medium bowl, combine ingredients for streusel topping, and using a pastry blender, two knives or your fingers, cut in the butter until mixture is combined and resembles wet sand.

In large bowl, combine flour, sugars, cinnamon, nutmeg, cloves, baking soda and salt.  Mix well with a wire whisk until thoroughly combined.  Add apples and mix until thoroughly coated with flour/sugar mixture.

In small bowl, combine butter, oil, eggs and vanilla.  Mix well.

Add wet ingredients to dry ingredients and fold until dry ingredients are just moistened.

Pour batter evenly into two prepared full size loaf pans, or 4 – 5 mini loaf pans.

Bake full size pans for 55 – 65 minutes, using the toothpick test to check for doneness at 55 minutes.  Bake mini pans for 30 – 40 minutes.
