Citrus Marinated Olives & Cheese
4 Clementines or Mandarin oranges
3 cloves garlic, minced (1 ½ teaspoons minced garlic)
½ teaspoon red pepper flakes
2 scallions, chopped, white and green parts
½ small red onion, finely sliced
½ cup extra virgin olive oil
¼ cup finely chopped parsley
2 cups mixed pitted olives, drained*
1 cup cubed feta or Mozzarella cheese
Juice and zest 2 oranges in bowl. Add garlic, red pepper flakes, scallions, red onion, olive oil and parsley and mix well.
Add olives and cheese, toss to coat with marinade.
Refrigerate for 12 – 24 hours, tossing occasionally to redistribute marinade.
Allow to come to room temperature before serving as oil may thicken in refrigerator.
