Baked Eggs Florentine

This recipe makes 3 servings.

1 package (6 ounces) frozen creamed spinach, thawed
2 scallions, chopped, white and green parts
2 slices smoked ham, cut into small cubes
¼ cup grated Parmesan Cheese
¼ teaspoon ground nutmeg
Salt to taste
Ground black pepper to taste
3 eggs
½ cup shredded smoked Swiss cheese*
1 tablespoon butter, melted
3 tablespoons Panko breadcrumbs

Preheat oven to 400 degrees.  Grease 3 ovenproof ramekins large enough to hold all ingredients.

Mix together creamed spinach, scallions, ham, Parmesan cheese, nutmeg, salt and pepper until well blended.

Divide spinach mixture evenly between the ramekins, making a small well in middle of spinach mixture.  Gently break an egg into each indentation.

Mix together butter and breadcrumbs.  Divide cheese evenly among ramekins, sprinkling cheese around outside of egg.  Top eggs and cheese with breadcrumbs.

Bake for 12 to 15 minutes or until eggs are set.
