1 refrigerated pie crust, softened according to package directions
1/2 cup sugar
2 tablespoons all purpose flour
1/2 teaspoon ground nutmeg
1/2 teaspoon ground cinnamon
6 medium Gala Apples, peeled, cored and chunked
2 tablespoons lemon juice
Topping
1/2 cup all purpose flour
1/2 cup oats (uncooked oatmeal)
1/2 cup light brown sugar
1/2 cup butter, cold and cubed
Preheat oven to 400 degrees. Spray a 9 inch pie plate with non-stick cooking spray. Place crust in pie plate, crimp edges.
Mix together sugar, flour, nutmeg and cinnamon, set aside.
Place apples in large bowl, sprinkle with lemon juice and toss. Add sugar mixture and toss, thoroughly coating all apples. Place in pie crust.
Mix together topping ingredients, using hands or a fork, until well blended. Butter will still be chunky. Evenly sprinkle over apples.
Place pie carefully in a large paper bag, fold over edges and staple or paper clip end.
Bake for 1 hour. Remove, split bag open….careful, it will be hot!
