Slow Cooker


Glazed Corned Beef

1 large onion, sliced in half moons
3 – 4 pound corned beef brisket (flat cut)
1 cup apple juice
1 cup orange juice
¼ cup packed light brown sugar
Zest from one orange
1 tablespoon prepared mustard (yellow)
6 whole cloves

2 tablespoons prepared mustard
2 teaspoons horseradish
2 tablespoons vinegar (balsamic preferred, but use what you have)
¼ cup molasses
¼ cup apple juice
¼ cup packed light brown sugar

Scatter onions evenly on the bottom of the slow cooker.  Place corned beef on top of onions.

In a bowl, mix the juices, sugar, zest, mustard and cloves and pour over the corned beef.

Cover and cook on low for 10 – 12 hours.  Remove corned beef from the slow cooker and place on broiler safe pan.  Preheat broiler.

Combine glaze ingredients, brush glaze on tops and sides of meat, and place under broiler on second rack position in oven.  Allow to caramelize, remove and let sit for 10 minutes before carving.
