Bread, Rolls and Biscuits


Banana Bread

1 ¾ cups all purpose flour
1 ½ teaspoons baking powder
½ teaspoon baking soda
½ teaspoon salt
½ cup (1 stick) butter, at room temperature
1/3 cup firmly packed light brown sugar
½ cup sugar
2 large eggs
1 ½ cup mashed ripe bananas (5 medium)
1/3 cup low fat milk
1 teaspoon lemon juice
½ teaspoon vanilla extract

Preheat oven to 350 degrees.  Grease a loaf pan, dust with flour.

In a large bowl, stir together flour, baking powder, baking soda and salt and set aside.

In large mixing bowl, cream butter with an electric mixer at moderate speed until soft.  Gradually add the 2 sugars, beating well after each addition.  Add eggs, one at a time, beating well after each addition.

Mix in flour mixture a little at a time, beating after each addition only enough to incorporate.  Batter will not be smooth.

In a small bowl, combine bananas, milk, lemon juice and vanilla extract.  Mix into batter.

Scrape into the pan and bake for 50 – 55 minutes or until a toothpick inserted in the center comes out clean.

Cool in the pan on a rack for 10 minutes, loosen and turn out on the rack.  Cool before slicing
