Roasted Teriyaki Mushrooms
¼ cup Mirin (sweet Japanese rice wine)
¼ cup soy sauce
2 scallions, sliced, both white and green parts
2 tablespoons honey
2 tablespoons extra virgin olive oil
2 teaspoons dark (toasted) sesame oil
2 teaspoons minced garlic
¼ teaspoon red pepper flakes, or to taste (optional)
1 pound crimini mushrooms, cleaned and quartered
Mix all ingredients together except mushrooms, until well combined.
Toss in mushrooms until well coated. Let marinate for 45 minutes. Remove from sauce.
Place on baking sheet or oven proof pan, roast in 425 degree oven for 20 – 25 minutes.
Serve as an accompaniment to chicken, beef or pork.
