Shrimp and Grits

 2 tablespoons butter

1 tablespoon extra-virgin olive oil

1 cup frozen PictSweet Seasoning Vegetable Blend*

2 cans Cream of Shrimp condensed soup, undiluted

1 cup water

2 cups heavy cream or half and half

1 tablespoon blackened seasoning (Zatarin’s), or more to taste**

1 cup quick grits (cereal aisle)

1 pound medium shrimp, peeled and deveined

6 scallions, white and green parts, thinly sliced on the diagonal

¼ cup finely chopped fresh parsley

1 cup shredded Sharp Cheddar Cheese

1 cup shredded Monterey Jack Cheese


In large sauté pan, over medium high heat, add butter and olive oil.  Add Seasoning Blend and sauté for 5 minutes.


Add Cream of Shrimp soup and water; bring to a simmer, lower heat to medium and cook for 5 minutes.


Add heavy cream (or half and half) and blackened seasoning, bring back to a simmer.


When mixture starts to simmer, slowly add grits, stirring constantly.  Add shrimp, scallions, parsley and cheeses and stir well.  Continue to simmer, uncovered, for 10 – 15 minutes, stirring occasionally to thicken.


Serve in a bowl with additional cheese, scallions and parsley sprinkled over top.


Serves 4 – 6


*A blend of onions, red and green peppers, celery and parsley.

**Or use your favorite seafood seasoning.


Tip:  You can also add 1 cup thinly sliced smoked sausage and sauté with the vegetables.
