Slow Cooker Easy Cheezy Potatoes
1 bag (30 – 32 ounces each) hash browns, broken apart*
½ large sweet onion, finely chopped
8 ounces sharp Cheddar cheese, shredded
4 slices bacon, cooked and crumbled
1 can (4 ounces) diced green chilies
3 scallions, white and green parts, thinly sliced on the diagonal
2 cups half and half
¼ cup butter, melted
½ teaspoon kosher salt or to taste
¼ teaspoon ground black pepper or to taste
In large (6 quart) slow cooker, combine hash browns, onion, cheese, bacon, chilies and scallions and stir well.
Mix together half and half, butter, salt and pepper and pour over potatoes.
Cover and cook on high for 3 – 4 hours or on low for 5 – 6 hours. Stir halfway thru cooking time.
*Can use cubes or shredded.
