Baked Fish Florenine


 2 (10 ounces) packages frozen spinach, thawed and squeezed dry

1 can (10 ¾ ounces) condensed Cream of Shrimp soup, undiluted

¼ cup heavy cream or half and half

¼ cup grated Parmesan Cheese

3 scallions, white and green parts, thinly sliced on the diagonal

¼ teaspoon nutmeg

2 - 3 Tilapia fillets (about 16 ounces, total)*

¼ cup Panko Bread Crumbs

2 tablespoons grated Parmesan Cheese

 

Preheat oven to 375 degrees.  Spray a 9” baking dish with non-stick cooking spray.

 

In a medium bowl, mix together spinach, soup, cream, ¼ cup Parmesan Cheese, scallion and nutmeg.  Pour into prepared baking dish.

 

Bake for 30 minutes.  Remove dish and place tilapia fillets on top of spinach mixture, skin side down.  Evenly sprinkle bread crumbs and Parmesan Cheese on top of fillets.

 

Return dish to oven and continue baking for 12 to 15 minutes or until fish flakes easily with a fork.
