How to Make Pumpkin Puree

 1 Pie Pumpkin (often referred to as a Sugar Pie Pumpkin)


Salt (optional)


Preheat oven to 400 degrees.


Cut pumpkin in half and scoop out the seeds.  Cut each of these in half, making four pieces of pumpkin.  Place on a baking sheet.  Rub the insides lightly with oil and lightly sprinkle with salt, if using.


Roast for about an hour, or until pulp is tender.


Scoop out the pulp and puree in a food processor.


A four pound pumpkin will yield about 1 ½ cups of pureed pumpkin, roughly the equivalent of one can of pumpkin.
