Cookies and Candy

Pumpkin Cake & Bakes


1 package white cake mix
1 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/4 teaspoon ground cloves
1/4 teaspoon salt
1 cup pure canned pumpkin (puree)
2 large eggs, beaten
1/4 cup butter, melted
1 tablespoon vegetable oil

 

Preheat oven to 350 degrees.  Lightly spray a baking sheet with non-stick cooking spray.

In a large bowl, combine cake mix, cinnamon, ginger, cloves and salt and mix well. Add pumpkin, eggs, butter and oil and mix until dry ingredients are moistened.

Using a small portion scoop (or a tablespoon), place cookie dough scoops on baking sheets.

Bake for 9 – 11 minutes or until lightly browned, remove from oven and let sit on baking sheet for a couple of minutes.  Remove to paper towels to finish cooling.

Spread cookies with Spiced Cream Cheese Frosting.
