Apple Tart

1 sheet puff pastry, thawed according to package directions
1 large egg, beaten with 1 tablespoon water
3 medium apples, cored, peeled & thinly sliced
1/4 cup light brown sugar
1 ½ teaspoons ground cinnamon
1/4 cup apricot preserves, melted

Heat oven to 375 degrees.  Unfold pastry, with a rolling pin, roll to a 11” x 10” rectangle.  Cut 1/2" strips from each side (4 total).

Brush edges of pastry with egg wash, place strips along edge, trimming to fit.  Prick crust with a fork along the bottom of crust.

Mix brown sugar and cinnamon together.  Layer apples evenly over bottom, sprinkle with sugar mixture.  Brush edges of pastry with egg wash.

Bake 25 to 30 minutes or until edges are puffed and golden and apples are tender.

Brush apples with melted apricot preserves.
