1 cup all purpose flour
1 cup milk
6 large eggs, beaten
¼ cup packed brown sugar
1 teaspoon vanilla
¼ teaspoon salt
¼ cup butter, melted
1 pound Italian sausage, browned and crumbled
1 cup shredded Cheddar Cheese
In large bowl, beat together flour, milk, eggs, brown sugar, vanilla and salt until well blended.
Place a cast iron skillet in oven and preheat oven to 450 degrees. When oven is preheated, remove skillet from oven and spray with non-stick cooking spray.
Pour melted butter in skillet and swirl to coat entire pan. Pour batter into pan and sprinkle crumbled sausage evenly over batter, top with cheese.
Bake for 20 – 25 minutes, until pancake is puffed and golden.
Cut into wedges and serve with powdered sugar and syrup.
