Chipotle Mayonnaise


 1 cup mayonnaise

4 chipotle chilies in adobo sauce*, finely chopped

3 tablespoons fresh cilantro, finely chopped

2 tablespoons adobo sauce from canned chilies (optional)

1 scallion, white and green parts, finely chopped

1 teaspoon lime juice

Salt

 

Mix together mayonnaise, chilies, cilantro, adobo sauce, scallion and lime juice until well blended.

 

Taste and add salt, if necessary.

 

Mayonnaise will keep for 1 week in refrigerator.
