Cakes, Tarts and Pies
1 ½ tablespoons ground cinnamon
3/4 cup light brown sugar
5 large Rome apples - peeled, cored and sliced
4 ½ cups all-purpose flour
¾ teaspoon salt
3 ¾ teaspoons baking powder
3 cups white sugar
1 ½ cup vegetable oil
¼ cup orange juice
¼ cup spiced rum
1 tablespoon vanilla extract
Preheat oven to 350 degrees. Spray a 10 inch tube pan with non stick spray.
Combine the cinnamon and brown sugar together and toss well with apple slices.
In a large mixing bowl, combine the flour, salt, baking powder and 3 cups of sugar. Stir in the vegetable oil, beaten eggs, orange juice, rum and vanilla and mix well.
Pour 1/3 of the batter into the prepared pan. Top with 1/2 of the sliced apple mixture. Pour 1/3 of the batter over the apples, top batter with remaining apple mixture, pour remaining batter over top. Pour any remaining juice from the apples over the top.
Bake for 70 to 90 minutes.
