Chicken & Turkey

Chicken Satay


 1 pound boneless, skinless chicken breasts or tenders

½ cup soy sauce

2 tablespoons lime juice

2 tablespoons rice vinegar

2 tablespoons honey

1 teaspoon minced garlic

1 teaspoon minced gingerroot

½ teaspoon hot sauce (like Tabasco) (more or less to taste)

10 - 14 bamboo skewers (10-12”), soaked in water for 10 minutes

 

If using chicken breasts, cut into strips. 

 

Mix soy sauce, lime juice, rice vinegar, honey, garlic, gingerroot and hot sauce in a resealable bag, add chicken strips and shake to coat all chicken.  Allow to marinate overnight, up to 24 hours.

 

Remove from marinade and thread onto skewers.

 

Grill skewers over medium coals, 5 - 7 minutes on each side, or until cooked thoroughly, or under oven broiler.

 

Serve with Peanut Sauce.
