3 medium cucumbers, peeled
1 teaspoon salt
2 scallions, white and green parts, thinly sliced on diagonal
3 tablespoons sesame oil
3 tablespoons seasoned rice vinegar
¼ - ½ teaspoon red chili flakes (to taste)
1 teaspoon sesame seeds, toasted
Cut cucumbers in half lengthwise, using a spoon, scrape out seeds.
Cut cucumbers into strips and cut into ½ inch cubes. Place them in a colander and sprinkle with salt. Toss to thoroughly mix and allow to drain over sink, or bowl, for 15 minutes. Rinse with cold water and shake to remove excess water. Toss cucumbers and scallions together in bowl.
In small bowl, mix together sesame oil, rice vinegar and chili flakes.
Pour liquid over cucumbers and scallions, toss to mix. Taste and add extra salt, if needed. Sprinkle with sesame seeds.
