Cheese and Egg Dishes

Irish Rarebit


2 tablespoons butter
2 tablespoons flour
½ cup milk
1 teaspoon yellow mustard (or grainy mustard)
1 teaspoon honey
½ cup Guinness (or other stout beer)
1 cup shredded sharp Cheddar cheese
Salt and pepper to taste
Dash of hot sauce, optional
4 slices white bread (Italian, French, Sourdough), toasted
4 eggs, poached, scrambled or over-easy

Preheat broiler, place oven rack on second level.  

Melt the butter in a heavy pan, and stir in flour to make a roux.  Cook on a low heat for one or two minutes.

Remove pan from heat and gradually beat the milk into the roux.  Return to heat and stir until the mixture thickens.

Stir in mustard and honey and finally the Guinness, salt, pepper and hot sauce (if desired).  Taste and adjust seasonings.  Simmer this mixture for 2 to 3 minutes.  

Add cheese and stir over very low heat until all the cheese has melted, do not boil.  Spread thickly on four slices of toast and brown under the broiler.

Remove and top each toast slice with an egg.  Sprinkle with additional cheese and pop under broiler for a few seconds, if desired.
