Canadian Bacon and Egg Monte Cristo Breakfast Sandwich
8 slices Sourdough Bread*
1 cup milk
4 large eggs, beaten
1/4 cup sugar
1 tablespoon vanilla extract
2 tablespoons butter
4 slices of Canadian Bacon
8 large eggs, scrambled with 1/3 cup milk or cream
4 slices Swiss Cheese (or your favorite)
Preheat oven to 400 degrees.
Place bread in a single layer (if possible) in a baking dish. Whisk together milk, 4 eggs, sugar and vanilla until well blended. Pour over bread, covering each slice. Allow the bread to soak up as much liquid as possible.
On a rimmed baking sheet, (or in a baking dish), place butter in bottom and place in oven until butter melts.
Remove baking sheet and place 4 slices of bread on sheet. Place one slice of Canadian Bacon on each slice of bread, evenly divide scrambled eggs between each slice of bread, place one slice of cheese over eggs, top with remaining bread slices.
Place in oven and bake for 10 - 15 minutes, or until lightly browned on bottom. Carefully, flip sandwiches over and continue baking for 5 - 10 minutes longer or until light browned on both sides.
Remove from oven, cut in half diagonally and dust with powdered sugar. Serve with syrup, if desired.
*Use good quality bread, substitute Brioche or Challah if desired.
