Bacon and Egg Salad


1/2 cup mayonnaise
6 slices bacon, cooked and crumbled
3 scallions, white and green parts, finely chopped
2 ribs celery, finely chopped
1/2 teaspoon yellow mustard or Dijon mustard (to taste) (can substitute 1 - 2 teaspoons dry mustard)
6 large eggs, hard boiled, peeled and chopped
 
In medium bowl, mix together mayonnaise, bacon, scallions, celery and mustard until well blended.
 
Add eggs to mayonnaise mixture and fold to combine, adding more mayonnaise, if desired.
 
Spread on choice of bread, toasted or not, with lettuce or not!
