2 cups all-purpose flour
¼ cup brown sugar
1 teaspoon baking powder
½ teaspoon ground cinnamon
¼ teaspoon salt
1/8 teaspoon ground nutmeg
2 large eggs, separated
1 ¾ cups milk
½ cup canola or vegetable oil
1 tablespoon lemon juice or white vinegar
1 teaspoon vanilla extract
In a large bowl, whisk together flour, sugar, baking powder, cinnamon, salt and nutmeg.
In separate bowl, whisk together egg yolks, milk, oil, vinegar and vanilla, until well blended. Stir into dry ingredients until just moistened.
In small bowl, whisk or beat egg whites until they form stiff peaks (tips stand straight up when beaters are lifted from whites). Gently fold egg whites into batter, do not overmix.
Preheat waffle iron and pour recommended amount of batter onto griddle. Cook for recommended amount of time as directed by the manufacturer.
