2 cans (6 ounces) Solid Pack White Tuna, drained
2 cups baby spinach leaves, rough chopped
1 cup diced cucumber, peeled and seeded
1 cup diced tomato, seeded
½ cup diced Kalamata Olives
8 ounces feta cheese, crumbled
½ teaspoon cumin
Salt to taste
Ground black pepper to taste
Whole Grain Bread
Lemon Basil Mayonnaise (see recipe below)
Mix together tuna, spinach, cucumber, tomato, olives, feta, salt, pepper and cumin until well blended. Taste and adjust seasonings.
Spread two pieces of wheat bread with basil mayonnaise, spread tuna on one slice of bread, top with other slice of bread. OR serve on a bed of mixed spring greens, topped with a dollop of basil mayonnaise.
