4 cups all purpose flour
2 cups sugar
2 teaspoons baking powder
½ teaspoon salt
2 cups diced canned peaches
8 ounces cream cheese, softened
4 large eggs
1 ½ cups milk or half and half
½ cup juice from canned peaches
¼ cup vegetable oil
1 teaspoon vanilla extract
Preheat oven to 350 degrees. Spray muffin tins (recipe makes 24 standard or 12 large muffins) with non-stick cooking spray.
In large bowl, whisk together flour, sugar, baking powder and salt until well blended.
Add peaches and toss until peaches are well coated with flour mixture.
In another large bowl, beat cream cheese to soften. Add eggs, milk, peach juice, oil and vanilla and beat until well blended.
Pour liquid ingredients into dry ingredients and mix just until dry ingredients are moistened.
Divide batter evenly into muffin tins.
Bake standard size muffins for 18 – 22 minutes and large size muffins for 28-32 minutes.
