6 tablespoons butter
1 ½ cups graham cracker crumbs
1/3 cup sugar
¼ teaspoon ground cinnamon
1 boxed brownie mix
1 tablespoon instant coffee granules
12 ounce package of large marshmallows
Preheat oven to 375 degrees. Prepare an 8” square baking dish by lining it with aluminum foil, leaving a slight overhang to use as handles. Spray the foil well with non-stick cooking spray.
In medium size microwave safe bowl, melt butter. Stir in graham cracker crumbs, sugar and cinnamon, mixing until well blended. Press graham mixture into bottom of prepared baking dish. Bake for 5 minutes.
Set oven temperature according to brownie package directions. Prepare boxed brownie mix as directed on box, adding the instant coffee granules to the liquid (as called for on the package directions) and stirring to dissolve before adding the liquid to the brownie mix. Pour brownie mix on top of the graham cracker crust.
Bake brownies and crust for 8 minutes less than recommended baking time shown in package directions. Remove from oven and line up marshmallows to completely cover the top of the brownies. Return to oven and bake for the remaining 8 minutes.
Turn oven to broil to lightly brown the tops of the marshmallows. Do not walk away! Watch this because they will burn quickly!
Allow to cool in pan, remove completely from pan using foil handles. Peel back the foil from the sides of the S’More Brownies and cut into even squares. To make cutting easier, place knife blade in hot water for several minutes to warm blade, wipe dry and make several cuts. Return to water, wipe blade clean and continue to cut brownies in this manner.
