Melt In Your Mouth Pecan Cookies
1 cup butter (2 sticks) at room temperature and very soft
2 teaspoons vanilla extract
½ cup powdered sugar (plus more for rolling cookies)
2 cups all purpose flour
1 cup finely chopped pecans
½ teaspoon salt
Preheat oven to 300 degrees.
In medium mixing bowl, beat butter and vanilla for 5 minutes until light and fluffy. Add powdered sugar and beat for 5 additional minutes.
Add flour, pecans and salt and mix until well blended.
Form into 1 inch balls (use portion scoop if you have one). Place 2 inches apart on ungreased cookie sheet and with the palm of your hand, flatten slightly.
Bake for 13 – 16 minutes or until light golden brown on bottom.
Remove from oven and roll in powdered sugar while still warm.
Roll once more in powdered sugar when cool.
