Leftover Turkey and Stuffing Roll

An innovative recipe for those leftovers from Thanksgiving dinner!
3 cups leftover stuffing (or 1 boxed stuffing made to package directions and cooled)
2 large eggs, beaten
3 scallions, white and green parts, thinly sliced
½ cup grated Parmesan Cheese
1 cup shredded cooked turkey
1 cup vegetables (corn, green beans, yams)*
¾ cup shredded Mozzarella cheese (could use Cheddar, Monterey Jack or Swiss)

Preheat oven to 400 degrees. Line a baking dish with aluminum foil and spray with a non-stick cooking spray.
In bowl, mix stuffing, beaten eggs, 3 scallions and Parmesan cheese until well blended.
Place stuffing mix on sheet of wax paper or plastic wrap.  Cover with another piece of plastic or wax paper; spread the stuffing into a rectangle approximately 11” x 9”, remove the top sheet.
With long side of stuffing towards you, evenly place turkey along edge closest to you in a line, do the same with the vegetable of choice, the cheese and the scallions.
Using the sheet of wax paper or plastic make a “roll” or “log” by bringing the long edges of the stuffing together and enclosing the turkey mixture completely. Twist ends of the wrap creating a tight roll.  Refrigerate for 15 minutes to firm.
Place roll in prepared baking dish and bake for 30 minutes. Remove from oven, let sit for 10 minutes. Slice and serve with reheated gravy.
