2 cups skim milk*
2 large eggs, beaten
½ cup packed light brown sugar
¼ cup butter, melted
2 teaspoons ground cinnamon
1 ½ teaspoons baking powder
1 ½ teaspoons vanilla extract
½ teaspoon nutmeg
¼ teaspoon ground cloves
¼ teaspoon salt
1 large apple (Honeycrisp, Rome, Red Delicious), peeled and cored
½ cup raisins
3 cups old fashioned oats
In large bowl, beat milk, eggs, sugar, butter, cinnamon, baking powder, vanilla, nutmeg, cloves and salt until well blended.
Chop apple into small cubes.
Add apples, raisins and oats to bowl and mix well.
Spray a 2 quart oven safe baking dish with non-stick cooking spray. Pour oatmeal mixture into baking dish, cover with plastic wrap and refrigerate overnight.
In morning, preheat oven to 350 degrees. Bake oatmeal for 35 – 40 minutes.
Serve with butter, honey, brown sugar, milk or cream.
*Use half & half for a richer oatmeal.
