2 cups all purpose flour
¼ cup packed light brown sugar
1 tablespoon baking powder
2 tablespoons pumpkin pie spice
½ teaspoon baking soda
½ teaspoon salt
2 large eggs
1 ½ cup pumpkin (puree not pie mix)
1 cup milk
¼ cup sour cream
4 tablespoons butter, melted
Preheat waffle maker according to manufacturer’s directions, spray with non-stick cooking spray.
In large bowl, whisk together flour, brown sugar, baking powder, pumpkin pie spice, baking soda and salt until well mixed.
In another large bowl, whisk together eggs, pumpkin, milk, sour cream and butter until well mixed.
Combine the two mixtures, folding in until just incorporated.
Pour recommended amount of batter into waffle maker, close top and cook until golden brown.
To keep waffles warm, without them getting soggy, heat oven to lowest heat setting (175 or 200 degrees), place cooked waffles directly on oven racks in center and top of oven.
