Double Duty Tomato Spread
8 ounces cream cheese (regular or reduced fat) at room temperature
12 - 14 sun dried tomatoes in oil
¼ cup tomato paste
½ teaspoon salt or to taste
¼ teaspoon ground black pepper or to taste
Place sun dried tomatoes in bowl of food processor and pulse until finely chopped.
Add all other ingredients to food processor and process until well blended.
Here’s where the double duty comes in! You can use this for an appetizer spread, either hot or at room temperature, or as a pasta sauce!!
Room temperature: Spread on crostini and sprinkle with crumbled feta cheese and chopped fresh basil.
Hot: Spread on crostini, sprinkle with shredded Parmesan or Monterey Jack cheese, place under broiler until cheese is bubbly.
To use as a pasta sauce: cook your favorite pasta according to package directions. Drain pasta, reserving a cup of the pasta liquid. Place pasta back in cooking pot.
Mix desired amount of Tomato Spread into hot pasta, adding reserved pasta liquid to create a sauce coating the pasta. Add more Tomato Spread if desired. Serve sprinkled with shredded Parmesan Cheese and chopped fresh basil or parsley.
