Shrimp Rolls


1 pound medium shrimp, peeled and deveined
2 tablespoons Old Bay Seasoning
½ cup low fat mayonnaise
2 ribs celery, diced
4 scallions, white and green parts, thinly sliced
1 teaspoon lime juice (fresh, if possible)
2-3 dashes hot sauce (to taste)
pinch of salt
1 tablespoon minced flat leaf parsley
½ teaspoon fresh minced dill or tarragon
6 fresh basil leaves, chopped
4 hot dog buns or croissants, insides slightly toasted
 
In large sauce pan, bring 3 cups of water and Old Bay Seasoning to a boil. Add prepared shrimp and cook until pink, approximately 3-4 minutes. Drain and run under cold water to cool and stop cooking. Rough chop the shrimp.
 
In large bowl, mix together mayonnaise, celery, scallions, lime juice, hot sauce, salt, parsley and basil until well blended. Fold in the shrimp.
Evenly divide the shrimp mixture between the 4 rolls and if desired, top with shredded lettuce and diced tomatoes.
