Baked Tilapia


4 Tilapia fillets*, thawed
½ cup fish breading
¼ cup Panko bread crumbs
¼ cup grated Parmesan cheese
¼ teaspoon salt (optional)
Non-stick butter flavored cooking spray
 
Preheat oven to 425 degrees.
 
Place oven safe baking pan in oven. Heat empty pan for 5 minutes, remove from oven and spray with non-stick cooking spray.
 
In small bowl, mix fish breading, Panko, cheese and salt until blended.
 
Dry the Tilapia fillets with a paper towel. Place fillets on prepared baking pan. Spray tops of fillets with cooking spray. Sprinkle crumb mixture evenly over fillets.
 
Bake for 7 minutes, turn oven to broil and brown tops for 1-2 minutes more, or until lightly browned.
 
*You can substitute Flounder, Perch or other thin fish fillet
