Couscous with Asparagus, Peas and Parmesan
1 teaspoon extra virgin olive oil
8 asparagus stalks, chopped
¼ cup finely chopped onion
2 cups chicken broth (or stock)
1 ½ cups couscous
½ cup frozen peas, thawed
½ cup grated Parmesan cheese
Ground black pepper to taste
2 scallions, white and green parts, finely sliced
In medium sauce pan, heat olive oil over medium heat. Add asparagus and onion and sauté until onion is just soft. Remove from pan and reserve.
In same pan, heat chicken broth until boiling. Stir in couscous, cover and remove from heat. Let sit for 7-8 minutes.
Fluff with fork and stir in asparagus, onions, peas, Parmesan and pepper.
Serve garnished with scallions.
