1 ¾ - 2 cups warm water (100 degrees)
1 teaspoon yeast
¼ cup light brown sugar, divided
4 cups whole wheat flour (can use whole wheat white flour)
1 teaspoon salt
In 2/3 cup of the warm water, mix 1 tablespoon brown sugar and the yeast. Allow to sit in a warm spot for 10 – 15 minutes to allow yeast to react.
In large bowl, mix remaining brown sugar (3 tablespoons), flour and salt together.
Add yeast mixture and 1 ¼ cups warm water, stir together, adding more water if necessary to wet flour mixture, and make it hold together.
Spray a loaf pan with non-stick cooking spray, spread flour mixture evenly in pan. Cover with plastic wrap or a towel, place in a warm spot for 30 – 60 minutes or until dough has doubled in size.
Place in preheated 400 degree oven for 35 - 40 minutes, or until it sounds hollow when tapped on.
Let sit in pan for 10 minutes, remove to wire rack to cool.
