Reuben Frittata

 9 large eggs, beaten

¼ cup milk

½ teaspoon salt

¼ teaspoon ground black pepper

Several dashes of hot sauce, or to taste

1 cup sauerkraut, drained

6-8 ounces corned beef, chopped

1 cup shredded Swiss cheese


Preheat oven to 400 degrees.


In a mixing bowl, whisk together eggs, milk, salt, pepper and hot sauce until well blended.


Over medium heat, in an oven-proof skillet or sauté pan (preferably non-stick), melt 1 tablespoon butter in 1 tablespoon vegetable oil.  Pour egg mixture into pan.  Allow mixture to heat and set.


When frittata edges are set, top with sauerkraut, corned beef and Swiss cheese, and place pan in oven.  Bake frittata for 15-20 minutes, or until eggs are set.


Cut into 6 wedges and serve warm, drizzled with Thousand Island Dressing (see recipe on website).
