Slow Cooker


Corned Beef with Apricot Sauce

 3 – 4 pound corned beef brisket (flat cut)

1 can or bottle stout beer

1 large onion, thinly sliced in half moons

1 small jar apricot preserves


Place onion in bottom of slow cooker.  Place brisket, fat side facing up, on top of onion slices, sprinkle with seasoning packet.


Pour beer into slow cooker, avoid rinsing away the seasoning from top of brisket.


Cover and cook on low for 10 -12 hours.


Remove brisket to broiler safe pan, cover with apricot preserves, place under preheated broiler for 5 – 10 minutes until preserves start to brown and caramelize.
