Vegetable Dishes


Savory Corn Pudding

¼ cup sugar
3 tablespoons all purpose flour
2 teaspoons baking powder
1 ½ teaspoons salt
6 large eggs
2 cups heavy cream
½ cup butter, melted
2 pounds frozen corn, slightly thawed

Preheat oven to 350 degrees.  Grease a 13” x 9” baking dish (or equivalent).

Mix together sugar, flour, baking powder and salt and set aside.

Whisk together eggs, cream and butter.  Gradually whisk in sugar mixture until smooth, stir in corn.

Bake for 50 – 60 minutes or until set and golden brown.
