Caramel Puffs


10 ounces of Puff Corn (1 1/2 to 2 bags, depending on size)
1 cup butter (2 sticks)
2 cups light brown sugar
½ cup light corn syrup
1 teaspoon vanilla extract
1 teaspoon salt
½ teaspoon baking soda
 
Preheat oven to 250 degrees.
 
Over medium heat, combine butter, brown sugar, corn syrup, vanilla extract and salt in heavy saucepan. Bring mixture to a boil. Boil for 5 minutes, stirring occasionally.
 
Remove from heat, stir in baking soda. Pour over Puff Corn in a large roaster pan, stir well.
 
Bake for 1 hour, stirring every 15 minutes. Cool on aluminum foil or wax paper.
