Chicken Cordon Bleu Loaf


1 tablespoon canola oil
½ cup finely chopped onions
1 celery rib, finely chopped
1 teaspoon minced garlic
1 ½ pounds ground chicken
1 large egg, beaten
½ cup chicken broth
½ cup seasoned dried breadcrumbs
1 tablespoon Worcestershire sauce
½ teaspoon salt, or to taste
½ teaspoon ground black pepper, or to taste
¼ pound deli smoked ham, thinly sliced
1 cup shredded Swiss cheese
4 slices Swiss cheese

Preheat oven to 350 degrees.

In a small pan, heat oil over medium heat, add onions, celery and garlic.  Sauté until onions a soft, but not browned.  Remove from heat and cool.

In large bowl, combine ground chicken, egg, broth, breadcrumbs, Worcestershire, salt and pepper until well blended.

Press out chicken mixture on an 9” x 12” piece of foil to make a rectangle about 8” x 10”.  Place ham evenly over chicken mixture leaving about a ½” edge, then sprinkle with shredded Swiss cheese.

Roll up starting with the long end and using the foil to assist.  Seal the ends and the seam to prevent cheese from leaking out.  Place seam side down on foil and transfer to a greased baking dish.

Bake for one hour, remove and place cheese slices on top.  Bake for an additional 15 minutes.

Slice and serve.
