4 cups frozen hash browns, thawed
1/3 cup butter, melted
½ pound hot Italian Sausage, browned
8 scallions, thinly sliced
1 ½ cup shredded sharp cheddar cheese, divided
4 large eggs, beaten
1 ¼ cups milk, half and half or heavy cream
Salt to taste
Ground black pepper to taste
Preheat oven to 425 degrees.
Spray a 9” deep dish pie plate with non-stick cooking spray. Press hash browns into bottom and up sides, drizzle with melted butter. Bake for 20 minutes.
During baking, brown Italian Sausage.
When hash brown crust is done, remove and lower oven temperature to 375 degrees.
Sprinkle cooked sausage, scallions and 1 cup cheese over crust.
Beat eggs, milk, salt and pepper together, pour over sausage.
Bake for 25 minutes, or until knife inserted in center comes out clean.
Remove, sprinkle with remaining cheese, return to oven just until cheese melts.
Garnish with chopped scallions.
