1 bottle inexpensive Balsamic Vinegar
1 frozen pound cake, thawed according to package directions, cut into 1” chunks
1 large can pineapple chunks
2 – 3 “just ripe” peaches, cut into 1” chunks
3 – 4 “just ripe” bananas (just turned yellow), cut into 1” chunks
1 tablespoon light brown sugar
1 tablespoon honey
1 tablespoon pineapple juice from can
10- 10” – 12” bamboo skewers, soaked in water for 30 minutes
Simmer Balsamic Vinegar over medium heat until reduced in half.
In resealable bag, pour ¼ cup reduced Balsamic Vinegar, brown sugar, honey and pineapple juice, mix thoroughly. Add pineapple chunks and peaches to liquid and allow to marinate for 30 minutes.
On each bamboo skewer, alternate marinated fruit, bananas and pound cake chunks.
Grill over medium heat, turning frequently to not burn.
Serve with a pre-made caramel, fudge or chocolate sauce. Top with some whipped cream (fat free, homemade of frozen whipped topping).
